淮扬菜(Huaiyang Cuisine)
淮扬菜系,又称苏菜,突出原料的本味,讲究菜肴的色、香、味、形。烹饪技法以炖、焖、蒸、炒为主,口味清淡,甜咸适中。代表菜品有松鼠桂鱼、叫花鸡、清炖蟹粉狮子头等。

Cooking techniques mainly include stewing, braising, steaming, and stir-frying, with a preference for light flavors and a balanced sweet and salty taste.
